MORE PASSION FOR PINK
i Carmel Highlands
For - me vinous passion is based
upon enjoyability and food pairing
versatility both of which have posi-
tioned Riesling at the top of the food
and wine ladder with Moscato half
a rung down and Dry Rose hot on
its heels. And, while I admire the first
two, it is the latter I find the most sly-
listically intriguing.
For instance, letb visit the Mulder-
bosch Cabernet Sauvignon Rose
2010 from South Africa ($11.95,
12.5 per cent alcohol, screw cap).
The tasty combo resume includes
no less than a tomato, cheese, and
pickle embellished hamburger, a
mustard and cheese seasoned hot
dog, braised beef (bright counter-
point), a floured saut@ed chicken
thigh, and lemon chicken (patron
feedback). As for veggies, thumbs
up with potato salad, braised car-
rots, artichoke and mayo, and po-
tato leek soup (particularly yummy).
Munchie-wise think Cheetos and
Lay's potato chips. Talk about ver-
satility
And I just had my introduction to
another variation on the theme, the
| Vina Robles Paso Robles Roseum
2011 ($13.95, 14.2). This crisp, dry
Rhonish blend of Mourvedre, Gre-
nache, Syrah, and Viognier was run
by a shrimp salad with vinaigrette
the first night, pairing nicely with the
boiled shrimp and tomato although
not so much with the sliced avo-
cado and beets. The next evening
it earned the accolade "pretty" with
Swiss chard and green onion soup.
One Rose that caught my atten-
tion from the first sip was the A to
Z Sangiovese 2011 from Oregon
($14.95, 13.0, screw cap). On the
first go-round it paired right up with
prawns saut@ed with butter, shal-
lots, and garlic (another pretty com-
bo) and on day two got along just
fine with brown sugar glazed baked
ham and asparagus. And this was
one of the wines poured at a recent
Dorothy McNett Cooking Club gath-
ering with the following results.
"We enjoyed it with my Bay Seal-
lop Chowder which has lots of gap
lic, celery, carrots and green onions
cooked up with fresh wild bay seal-
lops. Perhaps it was the sea salt in-
fused with black and white truffles
added at the very end of cooking
that brought it all together! Then we
added another taste of the Rose
with oven roasted sweet baby pep-
pers served with Cotswald cheese
strips. The sweet roasted baby pep-
pers with a pink Rose was a fairly
new taste combo for most people
present and they truly enjoyed it.
The baby peppers are sweet and
flavorful (not hot) so the Rose en-
hanced the vegetable flavors on the
tongue. It was a fine pairing." Love

You may recall that a prior column
labeled sweet, when balanced, an
attribute to the food pairing process,
and so it was with much confidence
that I put the Sweet Bliss Sweet Pink
Non-Vintage to the test side by side
with the aforementioned Roseum
Dry Rose. The delicate red cherry
and pink grapefruit flavors scored
with all elements of the shrimp salad
and interacted nicely with the Swiss
chard and green onion soup. The
next evening proved very successful
with prosciutto and cheese stuffed
baked chicken thighs. I am still re-
searching the varietal composition of
the Sweet Pink as well as the previ-
ously praised potato leek soup, po-
tato salad, and hot dog with cheese
and mustard lovin' Sweet Red but
I have no doubt that both have a
bright pairing future.
Bottom line, think pink.
Earlier this year, the agri-business
firm of Tanimura and Antle had filed
for permission to cut down 17 giant
mature walnut trees along Spreck-
eis Boulevard which have stood for
years lining the town's main thor-
oughfare. Before permission was
granted, contractors cut down one
tree and severely trimmed another.
Uproar ensued, with people sign-
ing online petitions protesting the
action. Frank Ono, former Pacific
Grove city arborist, said that the
trees to be removed all have "heart
rot." The county's emergency tree
removal rules were invoked for the
tree cut-down. Personal observa-
tion on Wednesday, April 18 showed
that what remained of the stump
was hollowed out.
